Lots of possibilities and theories.
Here is one other method:
Assume first that gravitons do exist
Particle accelerators (PA) also have particle
generators (PG).
Particle accelerators work with beam pointers.
Install in a few places (say every 500dt or fraction
there of) a PG creating gravitons... it fires off down
gravitic piping across the ship... and at various
points throughout the volume "beam pointers" in floor
redirect gravitons from the piping to the "air space".
Be adjusting the assorted Gravitic Beam Pointers (GPB)
you can also create gravitic compensation ie inertial
dampners.
Since all this system is interacting within the ship
the net result on the ships propulsion is zero.
This approach creates various story affects which I
will likely use in my own writings and settings.
In Travller lasers are "gravitic focused" and we have
"gravitic thrusters" so what ever makes those works
(short lived artificial gravitons?) makes the decking
work too.
Alternate:
Another alternative Ive used before is to propose that
gravitons can be collected, then they are released to
create artifical gravity.
As for other comments:
In Star Trek Enterprise in one episode they went to
the "sweet spot" which was a net zero-G location. The
roof was -1 G and the floor +1 G, so with a jump you
could transition from one gravitic field to the other
and sit on the roof.
In terms of deck hieght:
FFS v1 made a point of it, or was it somewhere else,
to plan decks on 3.5 m of height of which 2.5 to 3 m
was useable.
There are numerous needs for space and as most
deckplan walls are drawn "thin" you do need the
"between deck" space for the piping, controls,
sensors, stores etc etc.

I wrote the Fleet Books 1 & 2 with significant design
work into the shape and sizes for the habitation
areas.
One thing to bear in mind for spun ships is the
corolis affect and the human system. 1 rpm sustained
is a safe max in our RL TL. For Jovian I bumped this
to like 3 rpm to end up with a less-than-one but a
workable G-force in the living sections.
