Neat idea, but here's some thoughts using my background in particle
physics on a trip to the realm fantastic.

As far as we know, gravitons can't be contained. And they do have to
get out and interact to work--as someone pointed out, they are an
"exchange" particle.
Plus, here's a big problem: If you have enough gravitons in your ship
to give you 1G of gravity, and they interact according to the
inverse-square law, your artificial gravity system is going to attract
every piece of space debris as if you were in a 1G gravity well. That
could be a problem ("Crewman, go EVA and sweep all the space dust off
the top of the ship. While you're at it, do something about that
asteroid that slammed into my quarters too.").
If you have a shorter-ranged particle/effect that pulls on matter you
might get around this; but, now it's probably technobabble. However, a
different kind of pseudo-gravity particle/force could explain effects
that Tom spoke of:
